Case Study 1
A North London Academy selected Olive Dining Ltd to transform its meal offer and ensure that the food was audited to deliver a 95% freshly prepared menu offer.
EXECUTIVE CHEF
An Executive Chef was recruited to work with the existing development team to enable this. The service went from a poor grab and go to a restaurant service with no pasta featuring on the menu, served in china plates and bowls.
THE MANAGEMENT TEAM
The Olive management team are fully involved in the management of the services at the school. They attend regular student and parent meetings. A monthly finance and operations review is held with the Operations Manager and the Managing Director of the company to ensure the constant progression of the agreed business plan.
THE CHANGES
The changes we have made have ensured that uptake of school meals increased, and that there is a pleasant restaurant environment for the pupils to enjoy during their break.

Case Study 2
A School in North East London selected Olive Dining Ltd with a brief to improve the food quality, increase the variety, ensure that the menu offer was freshly prepared using fresh ingredients only. Additionally, the challenge was to improve the Customer Dining experience and improve the flow.
RESTRUCTURING
Olive Dining restructured the existing team and recruited a site based Executive Chef to prepare and manage the daily food offer
BETTER SERVICE
To increase the volume and speed of service a mirror counter was introduced with a full and plentiful salad bar in the middle to serve both counters. The emphasis at this school is to run an efficient service that offers the students the opportunity to eat many different cuisines and have a complete dining experience. The Dining Hall now looks less like a “canteen” but more like a Restaurant or Dining hall.
CONSULTATION
The students are fully consulted with on a termly basis and changes made from the feedback are fully communicated to all interested parties. The management Team of Olive Dining meet regularly with the school management team to progress the business plan and ensure a proactive approach to managing the service at the school.
